On this episode of Basics, I'm going to show you how to make two different kinds of pot roast: a classic Yankee roast that's as American as apple pie, plus a modern take on the classic French pot roast.

    2 cloves garlic
    2 sprigs thyme
    3 bay leaves
    1 small yellow onion, halved
    2 whole cloves
1 leek, sliced (just the white part)
    1/2 tsp whole peppercorns
    Kosher salt
    Black pepper
    4 boneless short ribs
2 marrow bones, about 4-5 inches in length

    1/4 cup finely minced chives
    2 Tbsp dijon mustard
    Dash of white wine vinegar

What's the sexiest place you ever made pot roast?

      1. 1973Washu

On a beach in far North Queensland, I used a cast iron dutch oven and cooked it over an open fire.

    3. 2chrono2

Bone marrow is like.... Nature's butter.

    4. 1973Washu

fat = flavor . I would rather have a small amount of fatty meat than a larger amount of lean meat.

    5. tdr124

Pot roas is easy mode. Do proper oven roast!

    6. Vayos ReaperoftheVoid

"shoving some cloves into halves of onions." US-new: and demonetized.

    7. Chely Margarita

“Fancy ass pot roast” love it 😂

    8. mxysptlk23

In France they have the metric system so they call it, “Royal with potatoes”

      1. DB Cooper's MoneyBags

Pulp Fiction was such a dope movie.

    9. Scupacium

      say "VEGETABLES"

    10. Hector Tio Salamanca

Does Babish have his restaurant? All these stoves and stuff around it means business.

    11. Brian Francis

That's not realistic pot roast. Real yankee pot roast is done in the slow cooker. You're a California boy trying to put your gay twist on it.

    12. Nova White

I like to make a gravy with the liquid from my red wine pot roast and parmesan cheese. I usually leave out potatoes because I make mashed potatoes on the side, sometimes with fontina cheese, cream cheese and chives. It is comfort food for sure.

    13. utoobguy30

or you can be lazy like i am and use a pressure cooker lol

    14. Karl Striepe

The second, "fancy-ass" pot roast seems really Asian-inspired. I wonder the history.

    15. R3dM3g

      Onion nipples, so french

    16. Azureey Kola

Ooh bay leaves! The one that freaked people out on Chipotle upon seeing their food with a _"leaf"_ lol

    17. Michael Kouznetsov

Why would you start with beef broth when you're yielding beef broth? This is not how you make pot roast. 🤦🏼‍♂️

    18. NikovK

Tomato pa... WHAT ARE YOU DOING MAN?!

    19. Evan Wilkinson

      cinnamon stick.

    20. sepps1981

The bg music got me wanting to listen to the actual OJays song it’s based on

    21. Jacob Hanna

Think a classic mirepoix is half onion, a quarter carrot, and a quarter celery.

    22. Angel Herrera

It was agonizing waiting for the beef broth.

    23. Alex Guadalupe

Hey Babish, just make sure as my boy Damonte would say "Don't get lost in the sauce"

      1. Dr. UpSideDown

        Thanks man

      2. Iovnfdvbsd

"Pot au feu" is a french dish that influenced the creation of the classic vietnamese dish "pho"

    26. Soviet Doggo

What if I used bull testicles?

    27. BizeDex

Love the show but the intro sounds like someone throwing drums down the stairs to the tune of a wild west saloon piano played by a coked up train engineer.

    28. Forever Undying

"What ingredients do you need for your pot roast?" YES

    29. JL Sagely

The cloves and onion boobs are hot...

    30. Linh McMullen

Is it possible to make this recipe in a slow cooker instead of oven?

    31. sir perfectionest

this fugin song got stuck in my head for way to long

    32. Valerie Lynnx

Such a turn on lol.... I need a house hubby that can cook

    34. Jessifero

3:10 Give the onion nips. Got it.

    35. david cater

5:32 It’s bad practice to leave cleaning supplies out while cooking.

    36. SnottyToe69

if you dont have the money to make this then there is an alternative. simply think about the ingredients and instructions while boiling a piece of bologna and gently fanning it with a beef flavored ramen noodle packet.

      1. Mike Berkman

OK Satan, calm down with the new torture methods will ya?

    37. Amanda Moss

BRO. I made this Friday night. Didn't add the potatoes but followed the recipe and MY GRACIOUS. I didn't know an eye of round could be so tender. So, thank you.

    38. Chromatic Luna

No one: Absolutely No one: Babish - *"..Beware of flying onions.."*

    39. Nancho Party

I hate pot roast, cuz my mom always makes it fall-apart "tender" and everything's mushy and bland. I want to make this.

    40. Thicc Nibba

When Babish was seasoning the meat..... “Give your meat a good old rub...” “Yeahhh boyyyyy”

    41. Sleepy Tea

Man I never knew what chives looked like until I looked out in my yard and saw them eeeverywhere I didn’t know my yard was a personal garden ha ha

    42. Rissa

dude. how do you do color balance? a lot of your food ends up looking neon-colored, it's hard to watch

    43. Clairressa Goad

      Wow

    44. T SexyRexy

A roast for which to pot...

    45. misy4ru3

I'm confusing about what's the point to season your meat first if you are going to simmer it like 3 hours?

      1. Grant Gary

F-flavor? Why else do you would you season food?

    46. Charlie Morgan

When should I add optional mushrooms on the Yankee pot roast?

      1. T SexyRexy

Same time as the potatoes and carrots.

    47. Cleansed_In_Pestilence _

"fancy ass pot roast" caught me off guard, thanks for the chuckle babish.

    48. J. Gant

I grew up strongly disliking pot roast- the vegetables and meat were always mush, and the meat cuts were always far too fatty. I'm looking forward to making this- especially with a lean cut.

    49. wayback playback

I make my pot roast with 3 simple ingredients: a glass "baking dish," some pot, and direct flame.

    50. aaron anstett

      Pot roasts are my favorite

    51. KhanDaPwner

      "be careful of flying onions"

    52. Rach S. CatMom

It's July, 89 degrees and I'm drooling while watching this

    53. Sheila Torio

Like,👍🏽. What about crock pot pot roast?

    54. Bio1993Hsapien

How do you keep the meat from drying out/getting cold while cooking the second veggie part?

    55. sneakyskunk1

well....he says basic....basic for someone who knows what they are doing.....eh, time to microwave a burrito.....

    56. Champagne Champagne

Mmm. I just burnt the bottom of the pot so it wasn't fawn but when I scrapped it up and put beef broth in it, it tasted good with the seasonings I put with it.

    57. Anon X

      Do a vegan season!

    58. Bryan Merrick

Omg the fancy pot roast came out soo good....

    59. Nicole Elkhoury

      Krusty Krab Pizza

    61. IDK IJS

I'm irritated how well put together this guy is... lol

    62. mariano molina

My mouth watered threw out the whole platting scene

    63. The Miss Katana

Came for Babish, stayed for the pot roast, enjoyed myself thoroughly via the background music.

    64. lil meatwad TV

I'm surprised no one talks about the fucken flying onions

    65. Richard Jimenez

The broth came out amazing, but the eye of round roast came out too chewy as I feared. Roast needs to be fatty to come out right. I’ll definitely substitute another cut of meat next time.

    66. utopiapro007

Fancy-ass pot roast only takes a bit more thyme.

    67. Sarah Fang

Anyone else think he said “pot of pho” and get really confused by the end result?

    68. Barry Baz

What's the difference between Kosher Salt and Salt Salt ?

    69. verdatum

I learned to cook largely because I hated my mother's pot roast. (to be fair, I can't beat her pies; classic, american, midwestern, fruit pies that make any god-fearing grown man cry tears of joy. I miss you, mom.)

    70. Nigher Feggit

Eye of round tender??? Never heard that before
