On this episode of Basics, I'm going to show you how to make two different kinds of pot roast: a classic Yankee roast that's as American as apple pie, plus a modern take on the classic French pot roast.
    Ingredients & Shopping List
+ For the Basic Pot Roast:
9 carrots, peeled (5 chopped for mirepoix, 4 chopped into larger pieces for roast)
1 small yellow onion, peeled and roughly chopped

    Kosher salt
    Black pepper
    1 Tbsp tomato paste
    3 cloves garlic
    2 bay leaves
    2 sprigs of rosemary
    2 sprigs thyme

4 russet potatoes, peeled and quartered
Special equipment: dutch oven or braising pot
+ For the Fancy-Ass Pot Roast:

2 sprigs parsley, plus an additional 1/2 cup chopped parsley
    2 cloves garlic
    2 sprigs thyme
    3 bay leaves
    1 small yellow onion, halved
    2 whole cloves
1 leek, sliced (just the white part)
    1/2 tsp whole peppercorns
    Kosher salt
    Black pepper

What's the sexiest place you ever made pot roast?

In my apartment alone with my cat.

    2. Champagne Champagne

Mmm. I just burnt the bottom of the pot so it wasn't fawn but when I scrapped it up and put beef broth in it, it tasted good with the seasonings I put with it.

    3. Anon X

      Do a vegan season!

    4. Bryan Merrick

    9. The Miss Katana

Came for Babish, stayed for the pot roast, enjoyed myself thoroughly via the background music.

    10. lil meatwad TV

I'm surprised no one talks about the fucken flying onions

    11. Richard Jimenez

The broth came out amazing, but the eye of round roast came out too chewy as I feared. Roast needs to be fatty to come out right. I’ll definitely substitute another cut of meat next time.

    12. utopiapro007

Fancy-ass pot roast only takes a bit more thyme.

    13. Sarah Fang

Anyone else think he said “pot of pho” and get really confused by the end result?

    14. Barry Ellis

What's the difference between Kosher Salt and Salt Salt ?

    15. verdatum

I learned to cook largely because I hated my mother's pot roast. (to be fair, I can't beat her pies; classic, american, midwestern, fruit pies that make any god-fearing grown man cry tears of joy. I miss you, mom.)

    16. Nigher Feggit

Eye of round tender??? Never heard that before

    17. Anonymous Boi In Northern Europe

*i accidentally smoked pot before this roast*

    18. Pedro Oliveira

Not gonna lie Motto Motto kinda liked those chunky veggies.

    19. MaidenVoyagee

That pot au feu recipe hurt my french heart lol the veggies and cut of beef chosen were wrong and also, it's not fancy, it's historically made with cheap cuts and vegetables.

    20. JustANoob

Yeah those flying onions really get you sometimes.

    21. Phleet Gaming

how do you combat burnout dude. i can't even take out the garbage without falling apart for a week. up to the audience to decide if that's an exaggeration

    22. I wanna Be tracer

Am I the only one who has never ate pot roast before?

    23. John Jacob Jingleheimer Smitty Werbenjagermanjensen

The size of those cut potatoes is fucking ridiculous nobody cuts a potato in half throws in the roast and calls it good stop trying to do hipster shit also that is steak and potatoes not roast, roast needs to fall apart with a fork. You're a disgrace

    24. Christian Haddad

    25. Nathan Szpakowski

I made the Yankee potroast for a GoT watch party and it turned out pretty great. The only thing I would change is making a bit of a thicker sauce for the roast because mine turned out a little bit bland

    26. kocharjm

Is that a sweet red wine or a dry red wine?

    27. Hyu Yu

im too poor to afford that kinda of meat lol but gr8 video :))

    28. Jude Passanha

is there any other kind of meat i can use to make pot roast? im from India and beef isn't available where i am.

    29. NoahKollerGus88

Am I the only one who thinks pot roast should be cooked in a crock pot?

    30. Xx_V01D_xX

And it’s all yours for only $150, no cheat, no scam, totally didn’t spit in the food.

    31. Dolachai Ang

As a Thai I have to you Americans have a fucking bland ass palate

    32. notDre

I made this following your instructions and it came out shit. The potatoes never cooked... Idk how you expected potatoes to cook in an hour at 325

    33. Abe Barrera

      Who writes these scripts? (Andrew/babish???)

    34. Nyan Cat

    41. Savannah Nason

Your basics video are one of the only things that are keeping me from eating Panda Express and Frozen food forever in College. 😂

    42. Miles G.

Oh, god. Don't think I've even seen the inside of a leek before because I thought that was a Longe Egge at first 3:12

    43. Jroc906

      NOT a "POT" roast!!!

    44. Duncan WIlson

BTW "Cornichon" means "pickle" in French.

    45. Andrea Naegele

What wine did you use? as someone who dosent particularly like wine I have a hard time with recipies that require it because i cant tell a good one from a bad one

      1. Daniellm

i don't like drinking wine either (neither can i tell the difference between low-high quality) so i'd say to just use whatever is in your price range

    46. Tracy Goode

Quick question--how many people does the fancy pot roast serve? My son wants this for his birthday, but we have a big family full of big eaters.

      1. Tracy Goode

@basant vimal sharma I doubt I'd need a semi full of ingredients, but the cauldron, probably..lol

      2. basant vimal sharma

You need a cauldron and a semi trailer full of ingredients

      3. Hard R

Quick answer-just give them the fancy pot roast and if they say its not enough just take it away

    47. Zachary Holub

You forget the butter bread for the left over juices

    48. SoundOfSwords

please do more arabic dishes! Examples: Mujaddara, mulukhiyah, moussaka, warag ainab (dolma), malfouf cabbage rolls.

    50. Yoyle 0340

Can I have a BONELESS pot

    51. Nicki Lewis

I know its simple, but try meatballs and spaghetti

    52. Patavinity

It doesn't 'have its roots in France', stewing meat is a more or less universal culinary technique. If anything, it was something brought to the Colonies by British settlers.

      1. Spooky Engie

i was drunk, too much soju for one night

      2. Vasting

engineer kitty no one said it was American

      3. Spooky Engie

i mean the earliest record of people cooking pot roast or "boeuf a la mode" was around 1792 this dish travel to the new world probably after the french revolution from french immigrant and later on with some german influence it became the pot roast what im saying isit isnt america im not saying it unique tho. . .

      4. Patavinity

@Spooky Engie What's your point? All countries that aren't America aren't the same country.

      5. Spooky Engie

I mean. . .it still not american so . .. yah

    53. Harry Tran Designs

You sir are elevating my kitchen game 👏👏

    54. Casey Cheney

When u cook the second dish are the potatoes and carrots soft

    55. Raul Alvarado

I had a friend so thicc he claimed he can make a pot roast outta his ass

    56. fulongfromthegrave

I fail to see the parallel between pot-au-feu and the second recipe. Never seen a pot-au-feu with asparagus and complex moves like that, its really a simple straight forward dish! I will steal that bone marrow kinda bearnaise thingie you did cause that looks delicious though! 🤩

    57. Paul Cassano

For those who read this, when he braises the short ribs add some guiness or other dark lager with lots of fresh rosemary.

    58. Lizzie Cottrell

My husband got me a pepper grinder for Valentine's Day!!! I was so excited to use it! I cannot believe how much better the pepper tastes! I've even used freshly ground pepper before, I guess I just forgot lol.

      1. Chris Roberts

    60. me thatguy

I always watch this stuff late at night and end up wanting to cook a pot roast at midnight.

    61. B T

I love his bald headed ass. Was having a bad day until I started to binge watch his videos today😭

    62. BAOQKD

If only these videos were more than 10 mins long, you would be making a lot more, and what you deserve for working so hard to teach us these amazing and unique recipes.

    63. Kailey Mo Becker

      the music lol

    64. johnny rockets

you should not be using metal utensils on an enameled dutch oven.

    65. Rohan Kannan

can you do a video of your watch collection?

    66. whau

    67. Jason King

    69. A. R.

Anybody who has the Ojays Loving you as the background music is already a cooking genius...

    70. Carson O'Doubhlain

We have been looking for things to make for (hopefully) regularly occurring, family dinners since my dad was diagnosed with Alzheimer's, and the Yankee roast fit the ticket. We doubled the recipe in order to feed 8 people with minor leftovers. It joined the clean plate club with every single one of us (some twice over). My dad is a real meat-and-potatoes, farm-boy at heart, so the look on his face as he inhaled this was perfect. The only modification we made was to turn the braising liquid into gravy. Thanks for doing this recipe. It was amazing.

    92. Victoria Perez

Pot roast is not American... It is French ....period. Just ask the host of Cubans with French roots where they learned the dish from (which is a staple of cuban food). Yeah ... Im pretty sure Americans didn't come over on tiny little boats to teach them ... Haha hahaha

    93. Christoph McDougal

I think that's an outside round roast, not eye of round. Eye of round would not have that piece of grissel.

    94. Hawkins 157

Can you do white bean chili, and potato soup.

    95. Joseph Richardson

Are we gonna get these recipes on the site or are we stuck with them in the description of this video?
